The Story
Small Wonder works out of Tasmania’s Tamar Valley and focuses on cool-climate wines with a light touch. This Blanc de Blancs is made in the traditional method from Chardonnay, with whole-bunch pressing, stainless-steel primary fermentation and a portion going through malolactic fermentation before the final blend spent eight months on lees and was tirage bottled in spring. It’s a lovely example of modern Tasmanian sparkling – coastal freshness, fine structure and just enough lees character to give it depth without weighing it down.

- Fish/meat: Tempura prawns with lemon aioli – the wine’s bright acidity and fine mousse cut through the crisp coating beautifully.
- Vegetarian: Goat’s cheese and caramelised onion tart – creamy pastry and tangy cheese work brilliantly with the citrus and brioche notes.
- Vegan: Courgette and pea fritters with lemon and herbs – fresh, green flavours and a bit of crunch suit the wine’s taut, saline finish.
